Joan Royster Jones is a researcher, cook, and aspiring nutritionist who is enthusiastic about helping people with diabetes. She is the author of the cookbook, Noodles to the Next Level, which elevates dorm dining for college kids. Joan, or "JR," as her friends call her, has lived with diabetes for decades. She is motivated by the growing number of diabetes cases in the United States, particularly among adults, teens, and children, as well as higher-risk ethnic groups. She lives in Harrisburg, PA with her Yorkie-chon, Iggy.
